Umami

The Umami taste is naturally present in several common foods 7,8. Umami rich ingredients (such as tomatoes, yellow cheese, mushrooms and meats in general) are commonly used for cooking due to their capacity of becoming the foods tastier.

Other example that deserves attention is breast milk. A essential food for the health of babies, it has nutritional and immunological importance, for it is rich in nutrients and offers protection against several pathological microorganisms 9. Breast milk is rich in free glutamate, recognized by the babies' taste as an important indicator of the presence of protein in foods 10.
